The Amazing Asparagus Frittata is a perfect breakfast to start your day, or it can be enjoyed as any other meal too. It is delicious and quick.
What You’ll Need:
2 Teaspoons of extra virgin olive oil
1 Small onion – thinly sliced
½ Teaspoon salt
1 Pound fresh asparagus – snap the ends off and cut into 1-inch lengths
4 Large eggs (Ideally free range)
1 Cup shredded cheese (Gruyere or Swiss are recommended)
Preparation Instructions
1) Preheat broiler 2) Heat olive oil over medium heat in a 10-inch oven safe frying pan 3) Add the sliced onion and salt, stir slowly until onions are soft but not brown (this takes approximately three minutes). You can also substitute your table salt for Himalayan sea salt. 4) Reduce the heat to medium-low and add in the asparagus. Cover the pan and cook until the asparagus is slightly tender (usually 6-8 minutes) 5) Whip the eggs and pour them into the pan. Cook for about two minutes until they are nearly done, but still runny on the top 6) Remove from heat and sprinkle the cheese over the eggs 7) Place pan in the broiler for 3-4 minutes until the cheese has melted and browned slightly 8) Cut into wedges, serve and enjoy
