Beef Bones with Marrow – 4 Pounds
Chopped Carrots – 4
Chopped Celery Stalks – 4
Sliced and Quartered Onions – Two Medium
Garlic Cloves – 4 with the peel on
Kosher Salt – 1 teaspoon
Whole Peppercorns – 1 teaspoon
Bay Leaves – 2
Fresh Thyme – 3 Sprigs
Parsley – 5 Sprigs
Apple Cider Vinegar – ¼ Cup
Cold Water – 19 Cups
Instructions
Start by taking all the ingredients listed above, and place them into a large crock-pot
Bring the water to a boil on the stove over high heat
Once boiling, move to the crock pot heather, and simmer for 24-48 hours, stirring occasionally
When stirring, skim any excess fat that rises to the surface
Remove from the heat
Strain into a large bowl and allow to cool
Place the broth in container
Refrigerate (use within 1 week) or Freeze (use within 3 months)
